Typical eats for KB Fit Britt

I’ve had a few requests from readers about what I eat. This post is not meant to show a “perfect” diet, and it definitely does not show everything I eat in a day. Remember that everyone is different and nourishes their body in their own way.

A couple of notes about my nutritional habits:

  • I don’t subscribe to any particular diet (nope, I don’t eat paleo, whatever that means).
  • Although I avoid processed food like the plague, give me ALL the (healthy) carbs!
  • I don’t eat a lot of meat, mainly because most of it comes from factory farms which grosses me out. However, I eat meat when I feel like it/know the meat has come from a good source. I don’t call myself a vegetarian.
  • Quick and easy meals are my go-to. I eat fried eggs for dinner more times per week than I like to admit.

Here are a few examples of different options for breakfast, lunch, and dinner. 

Breakfast:

Whole grain toast with avocado, salt, pepper, and dill. Full-fat greek yogurt topped with cinnamon, strawberries, mangos, and cashews.

Steel cut oatmeal with chia seeds, cinnamon, sliced bananas, and copious amounts of peanut butter (I may have had another spoonful after I finished this).

breakfast

Scrambled eggs with onion, zucchini, tomato, and a side of avocado. Top with copious amounts of Tapatio hot sauce!


Dinner:IMG_0608

Fried eggs with salsa, black beans, and avocado. Sauteed leeks and mushrooms. Oven-roasted kabocha squash. A couple slices of raw milk sharp cheddar cheese.

Two fried eggs and sauteed onion, bell pepper, zucchini, and mushrooms flavored with Braggs amino acids (there were definitely leftovers). I paired this with black beans and lentils.

Oven roasted Japanese sweet potato with coconut oil and cinnamon. This doubles as dessert, and tastes delicious with a dollop of peanut butter!


Snacks:

Brown rice cake with mashed avocado.

My mom’s homemade bread. It’s the best.

  1. I read this in the past but found myself on the page again as I was browsing around your site, and have to comment. I really like the way you write this post, it’s super real and normal and doesn’t like, freak me out like a lot of diet/nutrition posts do. You basically just say hey I eat really healthy and pretty consciously and here’s some ideas so you can do it too, if you want.
